BESAN DHOKLA|| BESAN DHOKLA RECIPE IN GUJARATI STYLE||

Besan Dhokla



You don’t have to be from Gujarat to have tasted a besan dhokla. A thick fermented gram flour steamed till it’s like a soft fluffy pillow. Cooled, cut into squares tempered with mustard seeds and garnished with tempting. Being Gujarati, a dhokla is Gujarat’s pride. This very same dhokla can be crumbed and served with accompaniments like assorted chutneys, fried green chillies and a delicious raw papaya salad in a different avatar known as khaman. Subtract the time it takes for fermentation, it is a quick recipe which makes a delicious snack anytime of the day.

Ingredients:

For Dhokla:-

1 and 1/2 cup Water

1/2 tsp Citric acid

5-6 tbsp Powder Sugar

1/4 tsp Asafoetida(Hing)

1/2 tsp Turmeric Powder

2 cup Besan(Gram Flour)

1 tbsp Oil

1/2 tsp Baking Soda

Circular Tin(You can also use square tin)

For Tempting:-

3 tbsp Oil

1 tsp Mustard Seeds

1 tsp Cumin Seeds

2 Green Chillies(Splitted)

1 tsp Hing

1 tbsp Sesame Seeds

2 tbsp Sugar

Salt as per taste

1 Cup Water

Method:

For Dhokla:-

In a Bowl,add Water,citric acid,powder sugar and Mix well.

Add Hing and Turmeric Powder and Mix well.

Take Besan and add the prepared water in it and mix well using a whisker. You can increase the measurement of water according to the consistency of the batter.

Mix batter continuously for 5 minutes in one direction. Rest it for 10 minutes.

After 10 minutes,add oil and baking salt and mix it in one direction till batter becomes fluffy.

Pour batter in a greased tin and steam it in a steamer for 20-25 minutes.

After dhokla cools,demould it and cut it in square shape.

For Tempting:-

In a pan,add oil,mustard seeds,cumin seeds and let it splitter.

Add green chillies,hing,sesame seeds and let colour change.

As sesame seeds colour changes,add sugar,salt and water and let it boil.

Pour tadka(tempting) in dhokla and Enjoy the tasty besan dhoklas!


 Note/Tip:

For Dhokla:-

1. Use the same bowl which you have used for measuring besan.

For Tempting:-

1. You can use curry leaves for tempting.

2. You can increase the quantity of spices according to your taste.
