Lemon Rice
You can make lemon rice with fresh steamed rice or even with leftover rice.The peanuts adds crunch to this sour and aromatic rice recipe.You can cook the rice al dente or cook a bit more.This lemon rice can also be given as tiffin box or as a picnic lunch.It's a light dish and you can have it as a light brekfast.You can serve this with vegetable salad or coconut chutney.

Ingredients:
1 bowl steam rice(you can use leftover rice also)
1/4 tsp chana dal
2 green chilli (chopped)
6-7 curry leaves
Pinch of hing
1 tbsp lemon juice
2 tbsp oil
2 tbsp peanuts
Cumin seeds(optional)
1/2 Mustard seeds(rai)
2 dry red chilli
1/2 tsp udad dal
1 tbsp coriander powder
1/4 tsp turmeric powder(haldi)
Method:
Heat oil in a kadhai,add cumin seeds,mustard seeds,asafoetida(hing),curry leaves,red chilli and green chilli and mix well.
Add udad dal,chana dal and peanuts and roast it well.
Add turmeric powder and rice and mix well.Add coriander.
Turn off the flame.Add lemon juice and mix well.
Enjoy your lemon rice with vegetable salad or coconut chutney.
