Palak(Spinach) Paneer
Palak(spinach)are the source of many nutrients. They also contains many vitamins and minerals.Palak paneer is one of the popular based spinach made with spinach gravy,spices and paneer. Palak Paneer is basically soft paneer(cottage cheese). It is mostly popular in North India. I have used normal paneer but,you can use shallow fried paneer.

Ingredients:
1 bowl palak puree
200gm Paneer (cottage cheese)
1 tbsp fresh cream
1/2 tbsp jeera powder
1/2 tbsp coriander powder
Salt as per taste
1 sliced onion
1 chopped tomato
1 tbsp ginger garlic paste
1 green chilli
Small piece of Ginger
2 tbsp Butter
Method:
Making Palak Puree:
Rinse the palak /spinach leaves very well in running water.
Boil 3 cup of water in a pan add pinch of salt and sugar in hot water and stir,than add palak leaves in the hot water let the palak leaves sit in the water for 2-3 minutes.
After 2-3 minutes switch off the flame,strain the palak leaves
Immiediately add palak leaves in a pan and add cold water this method help to preserving the green colour of the spinach allow the spinach leaves to be in the cold water for a minutes or two.
Making Palak Puree:

Drain the water add spinach in a mixer jar and blend it well. Make a smooth palak puree do not need to add water while making the puree,keep the spnich puree aside.
Heat a kadhai/pan and add butter,let it melt. Add onion,tomatoes,ginger garlic paste and ginger and saute it for 2-3 minutes.
Let it cool for 5 minutes,then add the mixture in mixer jar and make a smooth paste.
Heat a kadhai and add butter and let it melt. Add the onion,tomato ginger garlic paste mixture saute for a minute. Now add coriander powder,jeera powder and salt.Mix it well and let it cook.
Add palak puree,paneer cubes and fresh cream mix it well.Let it cook for 5 minutes
Once gravy cook well.turn off the flame.
Palak Paneer is ready!
Serve palak paneer hot with roti,naan,paratha or with jeera rice.
Suggestion: You can also add garam masala powder for enhance taste.
