Corn Masala Curry
Corn masala curry is a mildly spicy indian curry of boiled sweet corn kernels tossed in tomato and onion puree.This curry does not have yoghurt or curd.Sweet corn is a great little packet of delight.I love this ingredient and often use in so many different dishes.This is an easy corn masala curry recipe,we made a rich tomato onion gravy with some cashew nut paste.This gives really great flavour to this mild curry.

Ingredients:
1 small bowl onion puree
Salt as needed
2 tbsp oil
1 bowl boiled corn water
Red chilli powder as needed
1/4 tsp turmeric powder
Pinch of hing
1 tsp cumin seeds
1 tbsp chilli ginger paste
1 small bowl tomato puree
1/4 cup cashewnut paste
1 bowl corn kernels(boiled)
Method:
Heat oil in a kadhai,add cumin seeds(jeera) and let it splitter.
Add hing and onion puree and saute it for 2-3 minutes till its colour changes light brown.
Once colour changes,add tomato puree and mix it for 3-4 minutes.Add salt,turmeric powder and mix it well.
Add chilli ginger paste and mix it well.Add red chilli powder and boiled corn kernels.Mix it well.
Add boiled corn water and let it cook for 2-3 minutes.
Add cashewnut paste and mix it well .
Corn masala curry is ready to serve.You can serve this with roti or pulao.
