SANDESH

Sandesh

Sandesh is one of the most popular sweets made during durga pooja. like all popular Indian sweets, sandesh is popular in West Bengal. It is a very easy recipe that you can make it at home.It is prepared by tossing the chhena lightly with sugar over low heat. Some recipes of Sandesh  the use of chhena or paneer which is made by curdling the milk and separating the whey from it instead of milk itself. 



Preparation time:30 Minutes

Cooking time:20 Minutes

Total time:50 Minutes

Ingredients:

200 gm paneer                                                      

Half litre cow milk

2 tablespoon Lemon Juice

1/4 cup powdered sugar

1/4 teaspoon green cardamom powder

Kesar or nuts(for garnishing)optional

Method:

Boil the milk on medium flame.

When it starts boiling,reduce flame and add lemon juice.While stirring continuosly for 2 minutes,milk solid and liquid potion will start to separate.

When it separates completly,transfer it to a muslin cloth,line over it and drain the whey.Rinse paneer under running water to remove lemon taste.

Tie prepared paneer in a muslin cloth.Squeeze it to drain the water and hang it till drain all water.

Put the solidified paneer to a large plte.It should be moist.

Knead it like dough for around 7-8 minutes until it becomes smooth.

Add sugar and cardamom powder.

Knead again for 3-4 minutes and mix well.

Take prepare mixture in a pan on a low flame.Till mixture turns a little thick but till moist,do not cook it for long time.Turn off the flame and let it cool for 2-3 minutes.When it is warm,knead well.

Make round shape balls or press it gently between your palm.Sandesh is ready to serve.

Garnish with kesar or nuts(optional).

Note:

Place this sweet in a refrigerator and chilled it for at least 1 hour for serving.
