Schezwan Sauce
Schezwan Sauce is a famous sauce from Chinese cuisine. It
is super spicy and hot sauce.It's main ingredients are red chilli, garlic, ginger
and onion. Sauce can be used to make schezwan noodles, Fried rice or can be
used as a spread and dip for momos.
Preparation Time: 10 minutes
Cook Time: 25 Minutes
Total Time: 35 Minutes
Serving: 1 cup
Ingredients:
20 Kashmiri
red chilli (soaked in water for 2 hours)
3 bedgi
chillis (soaked in water for 2 hours)
15 garlic
cloves finely chopped
1 inch ginger
finely chopped
5-6 shallots
or Sāmbhar onion
1 tablespoon
soy sauce
1 tablespoon
vinegar
¼ cup water
2 tablespoon
ketchup
2 tablespoon
sugar
Salt to taste
Method:
Heat oil in a
pan and add ginger garlic sauté on low flame till row aroma goes be careful not
to burn ginger garlic.
Add minced
onion and let them cook on a low flame.meanwhile discard most water used to soaked the chillies and grind the chillies with 3 tablespoon of water.
Once onion
are like almost melting add ground chillies, soy sauce ,vinegar, ketchup, sugar,
salt and water (1/4 cup water)
Now boil and
simmer till sauce thickens .Once oil separated turn off the flame let sauce
cool down completely.
Serve with Chinese
dish or as a dip.

You can store sauce in the refrigerator for up to 15 days in airtight container.
