Rava Dhokla
Rava dhokla or suji dhokla is a soft fluffy, Steamed savoury cake made with rava,herbs,spices. I am making instant version of rava dhokla and does not need fermentation. Using curd and eno as a levening agents.
Ingredients:
1 cup fine suji/rava
1/2 cup curd
2 tbsp oil
1 tbsp ginger chilli paste
salt as per taste
1 cup+4 tbsp water
1 tsp eno/fruit salt
1/4 tsp red chilli powder
1/2 tsp mustard seeds
6-7 curry leaves
1/4 tsp Asafoetida/hing
1/2 tsp cumin seeds
Method:
In a bowl add curd and rava mix well.
Add little water to make lumps free batter.
Keep a side for 15 minutes.
After 15 minutes add 2 to 4 tbsp water if required.
Add salt,oil,ginger chilli paste mix well .
Finally add eno and mix in a one direction.
Pour batter in oil greased tin or in a plate.
Sprinkle red chilli powder on top .
Meanwhile prepare steamer or idli cooker by adding water in it and let water boil well.
Once water started boiling. Keep tin in the middle and cover the steamer .
Steam dhokla for 15-20 minutes on medium flame.
Once dhokla is ready let it cool down.
Demould and pour tadka on top.
For tempering:
In tempering pan add 1 tbsp oil.
once oil heated well add mustard seeds and jeera.
once jeera splutter add hing, curry leaves and pour tempering on dhokla.
Served dhokla with chutney.
Note: Batter should not be very thick nor runny.
