Khichiya Papad
Khichiya Papad is made in summers.They can be served as snacks or with main meal as a side dish.They can be made by sun drying method and also can be dried at home.Once they are dried they can be stored for a long time. Follow the steps to get very crispy and crunchy papad.
Ingredients:
1 and 1/2 cup water
1 tsp Ajwaine
1 tsp Jeera
1/2 tsp salt
1 tsp Papad khar
1 cup Rice Flour
1 tbsp oil
Method:
In a pan,add water and let it boil. Now add Ajwaine, Jeera, Salt, Papad Khar and Mix it well.
Now add Rice flour and mix it with the help of rolling pin and turn off the flame.
Now take the mixture in a plate and add oil in it and take a bowl and add oil behind it and knead the mixture when it is warm.
In a idli pan, put the strainer. Meanwhile knead the dough.
Divide the dough in 4 parts and roll the dough. Now make a hole in middle.
Now, Grease the strainer in the idli pan.Add the divided dough in idli pan and cover it. Steam it till 20-25 mins on medium flame.
After 20-25 mins take out the divided dough. Check it with a fork or knife if it comes out clean then your dough is steamed properly.
When the dough is warm knead it with bowl with oil greased behind it.
After kneading 4-5 mins make small balls of the dough and put it in caserole.
Now take a polythene sheet(which is available in house)and a dough ball and apply oil on it and start rolling papads.
Now take the papad and put it in other polythene sheet.Now make all papads the same way.
Dry the papads in sunlight or under the fan.
